So in case you haven't been able to figure this out about me, yet... I am all about finding an easy way to do things. I love to cook and all, but lately I have had so much on my plate that I just haven't really had the time to do so. Today was one of those days. I was able to think ahead enough to thaw out some chicken, though and just knew I would need to figure out something to do with it later while Little Man was napping...
So once he was down for a good while, I pulled the 2 pounds of thawed chicken out and cubed it up into rough, bite-sized pieces. I knew I wanted to use the crock pot for today so I wouldn't have to fuss with it during the busy afternoon. So I started searching the cabinets. That's when I remembered all of those recipes I had seen on Pinterest that went something like "Chicken Cheese & Rice Casserole" done in a crock pot... so I thought I should be able to figure something out with my knowledge in the kitchen, right?
I pulled out the following ingredients:

1 can of sweet whole kernel corn, drained
1 can cream of chicken
1 can cheddar cheese soup
1 bag Rice Sides - Chicken & Broccoli
1/2 stick butter cut into chunks - (not pictured because I didn't think of it until after the camera was put up)
Note: I didn't have it on hand this time, but in the future I will add in frozen broccoli florets to give it more on that end since you couldn't even tell they were there this time.
But I didn't want it to be just plain ol' casserole like everyone else's casserole. So I brought out my seasonings. Yes I know that the packet of rice sides has seasonings, but i like flavor, and lots of it, so just hush!

1/8 tsp garlic powder
1/8 tsp celery salt
1/8 tsp season-it-all
a dash of crushed red pepper to taste
Now for putting it all together...
Step 1. Put all the chicken pieces in the bottom of the slow cooker. Add the seasonings on top. Mix it all up well.

Step 2. Dump the corn in.
Step 3. Pour in the entire contents of the rice sides packet. Then add in the cheddar cheese soup and the cream of chicken soup.
Step 4. Now mix all of it up well.
Cook on low for 5-6 hours or on high for 2-3 hours, stirring every 2 hours from bottom, until chicken is cooked through and rice is cooked properly.
