Tonight I had to come up with a relatively easy meal for the kids and I so I did what every mom does when she has no plan and is low on cash for takeout... Opened the fridge with dread to take a quick mental inventory.
Low and b ehold, I had some random ingredients that I knew I could throw together to make a scrumptious meal for the fam and still keep it on the healthy side of life. I put the following in a large bo wl:

2 lbs ground beef (low in fat), thawed
2 eggs
15 Ritz crackers, crushed
1 can French's fried onions, crushed
1 green bell pepper, diced
1 red bell pepper, diced
1/2 white onion, diced
3 pieces celery, diced
3-4 Tbsp (your fave brand) BBQ sauce
4-5 Tbsp ketchup
2 tsp season-all salt
2 tsp fajita seasoning
2 tsp minced onion flakes
2 tsp crushed red pepper flakes
1 tsp celery salt
I separate my veggies into a separate bowl so I can mix the seasonings and meat with the eggs first, then add the veggies.

So then you mix it all together in one bowl and separate into loaf pans. I use a brownie pan because the portioning is right for my family, but use what you prefer. I was able to make one pan of the meatloaf and save another loaf worth in a freezer bag for another time that I might want a home-cooked meal but am feeling lazy.. Trying to be prepared. :) Oh don't forget to press the sides in so the fat drains neatly for you!
I took a picture of what mine looked like but then added ketchup on top and covered it with foil before I put it in the 400 degree (preheated) oven and set the timer for 40 minutes. When the time has passed, remove the foil, drain the grease, and bake for another 10 minutes or so. Serve with your favorite sides and you will have everyone coming back for more!
BTW's... I forgot to take a pic of it before serving and eating it because it smelled delish! Sorry.
