Best Ever Zucchini Banana Bread
For a batch that will make 8 mini loaves or 2 regular loaves, you will need the following:
3 eggs
1/2 cup applesauce
1/4 cup canola oil
2/3 cup PACKED brown sugar
1 cup white sugar
1 cup grated zucchini
2 ripe bananas, mashed
2 tsp vanilla extract
3-1/2 cups all-purpose flour
1 Tbsp cinnamon
1-1/2 tsp baking soda
1 tsp salt
1/2 cup chopped walnut (I did not add these as the hubs does NOT like any kind of nuts in his food...)
Note: I substituted the applesauce 1:1 for part of the canola oil to be slightly healthier. You can do 3/4 cup oil if you prefer, though.
Preheat your oven to 325 degrees. Grease and flour your loaf pans. In a large bowl, beat eggs until light yellow & frothy. Add in applesauce, oil, both sugars, zucchini, banana, and vanilla extract. Blend it together until well combined.
Stir in the flour, cinnamon, baking powder, baking soda, and salt. Add in nuts if you are using them in your recipe. Divide the batter evenly into pans.
Bake for 45-50 minutes for a full loaf pan and 30-40 minutes for the mini loaves. Check by inserting toothpick. When it comes out clean, your loaf is done! Allow to cool slightly & serve warm (with butter for best taste).

Cheater Peanut Butter Cookies - Easy Peasy

1/2 cup oil (I used canola)
1-1/2 c. crunchy peanut butter
2 large eggs
Optional: chocolate chips
Preheat oven to 35o degrees. Mix all ingredients until blended well. Scoop into a greased muffin tin (about 1-2 tsp size per muffin cup). Bake for 10 minutes or until light golden brown. Allow to cool in pan 5 minutes, then remove to wire rack for remainder of cooling period. Store in air-tight container.

Healthy Pumpkin Muffins

1- 14.5 oz can pumpkin puree
1 cupcake pan
EVOO or Pam cooking spray
Preheat oven to 350 degrees. Mix both ingredients in a medium bowl with a spatula. DO NOT add any wet ingredients (it will seem too thick, but it works). If there are cake mix lumps left after mixing, use a hand mixer to smooth out. Spoon balls of mix into greased cupcake pan. Whatever shape you see in the pan is what will come out of the oven. Bake according to cake mix instructions for cupcakes (roughly 20-30 minutes) or until toothpick comes out clean. Enjoy!
