Ever get a hankering for Mexican food but you are either too broke or just don't have the ability to obtain said Mexican food? I get these cravings frequently and I finally found a cure!
Step 1. Gather your seasonings (crushed red pepper, season-it-all, garlic powder, sea salt, black pepper, and minced onion). Measure out roughly 1/8 teaspoon of each (to taste - remember... I like mine with a kick!) and mix in a small dish. Set aside.
Step 2. Trim your (2 lbs of thawed) chicken tenders or breasts. If you are using breasts, you may want to slice them in half width-wise into tender-size pieces for quicker cooking.
Step 3: Get your pan nice and hot (about medium-high) to where some water splashes will sizzle. Drizzle about 1-2 Tbsp of EVOO over the pan and swish around the pan to spread it.
Step 4: Place the chicken pieces in the pan after seasoning one side. Make sure to keep them spread out so they are not touching if possible. Let the chicken cook about 1/2 way through.
Step 5: Flip the chicken over and allow it to cook through to the other side.
Step 6: Cover chicken and let simmer on medium heat until cooked through. Check every 3-4 minutes and flip as needed to avoid burning.

Step 7: Place chicken onto plates (or platter) and top with about 1-2 Tbsp guacamole. I use about 1/3-1/2 of the 100 calorie packs from my grocery store. I do it this way so I can freeze what I don't need until I am ready for it so it doesn't go to waste.
Step 8: Get 1 slice of pepperjack cheese per piece of chicken.
Step 9: Fold the cheese in half and place it on top of the guacamole.
Step 10: Microwave for 20 seconds! You can also prepare this whole thing in the pan if you really wanted to.
Slice that puppy up and enjoy the melty goodness!!!
