I don't know where you live, but we live in the HOT, dreadful Texas heat, where summer can equal a $500 energy bill to cool your home... Running the oven at 375 degrees for an hour and the heat that comes out into your home from doing so can really put a damper on your energy usage, and create unnecessary work for your air conditioner. August is normally the hotter part of the summer for us here, so after seeing the brilliant idea on a blog elsewhere, I decided to come up with my own menu for this month of oven-free recipes for August. This month, I will use the grill, my handy crock pot, and the stove top to reduce the amount of work I cause for my a/c and keep my home cooler for cheaper! Who's with me???
Yes, you read that right.. Healthy cake! You will not believe me when you read this, I know. You have to try it to believe it. Just do it! You know you want to see it for yourself!!!
For this, all you need is a box of Devil's Food chocolate cake mix & 1 can of Pure Pumpkin Puree (not pie filling, pure pumpkin). This will take the place of all of the eggs/oil. Combine the two ingredients in a mixing bowl and mix well until the lumps of mix are gone.
If you are going for the cake version, add about 2 Tbsp water and continue mixing until smooth. Pour into a greased 9" x 9" pan. Bake at 350 degrees for 30-45 minutes or until you reach the texture you are looking for. I like my brownies fudgy so I bake for about 35 minutes but the cake is closer to 40-45 minutes, when a toothpick comes out clean.
Trust me, you will not taste the pumpkin one bit. My husband didn't believe me and I made him watch me make it and try it himself. He is now hooked!

Step 1. Gather your seasonings (crushed red pepper, season-it-all, garlic powder, sea salt, black pepper, and minced onion). Measure out roughly 1/8 teaspoon of each (to taste - remember... I like mine with a kick!) and mix in a small dish. Set aside.
As promised, I am posting our personal choice for our gift to Dad this year. Overall, it was a huge success! The kids had a lot of fun painting the letters, picking out the spot for pictures, posing, selecting pictures for use, and then picking out a sentimental phrase for the spot on the left. I know there is a bit of a glare, so I will caption it for you...
The phrase reads "We're as lucky as can be... The best Daddy in the world belongs to us!"
